WHY THE FLOUR WE USE MATTERS
Einkorn
Einkorn is an ancient wheat. Not only does it taste delicious it is lower in gluten, higher in minerals, vitamins and protein. It also doesn't raise your glycemic index.
Rye
Rye is also considered an ancient grain. It is rich in fiber and has a lower glycemic index compared to modern grains.
Sprouting the Grain
Sprouting the grains before milling into flour reduces the phytic acid which allows your body to access the nutrients of the grain more easily. It is also better for digestion.
